1/2 cup of peanut butter
1/2 cup maple syrup
1 tsp vanilla
Dash of salt
1 1/3 cups whole wheat flour

Dark chocolate of choice
In a large bowl, cream together the peanut butter, maple syrup, vanilla, and salt until smooth. Add in the whole wheat flour and stir until a dough forms.
Drop the dough by heaping spoonful onto a cookie sheet or plate lined with parchment paper, and roll into balls. Flatten each ball to form a disc. In the centre of each disc, place a small dollop of Halo Top and wrap the cookie dough around it to form it back into a ball. Repeat with all cookie dough discs and place into the freezer for 1-3 hours to firm up.
Once firm, melt dark chocolate of your choice and remove your cookie dough bites from the freezer. Coat in the dark chocolate and return to the freezer for at least 1 hour before serving. Enjoy!
